Adobo Beef Tacos With Pickled Red Onions

Marinade time:  15 min. - 2 hrs.
Total prep time:  35-40 min.
Yield:  8 servings

2  beef shoulder top blade (flat iron) steaks, 8oz. each
8 small corn tortillas, warmed
1 c. crumbled queso fresco
chopped fresh cilantro

Pickled Red Onions:
1 c. thinly sliced red onion
1/3 c. white wine vinegar
1 tsp. salt
2 Tbsp. honey

Seasoning:
1 Tbsp. smoked paprika
2 tsp. adobo seasoning
1 tsp. ground chipotle chili powder

Combine pickled onion ingredients in medium bowl, stir well.  Cover and refrigerate while preparing beef.
Combine seasoning ingredients in small bowl, press evenly onto beef steaks.  Cover and refrigerate 15 minutes to 2 hours.
Place steaks on grid over medium, ash-covered coals.  Grill, covered 10-14 minutes for medium-rare doneness, turning once.
Remove from grill, let stand 5 minutes.
Meanwhile, drain pickled onions well.  Carve steaks into thin strips.  Top tortillas evenly with steak, queso fresco and pickled onions.
Sprinkle with cilantro as desired.
